How can I reuse or recycle … leftover bits of turkey?

Christmas tree made of lightA whole load of people are going to have whole load of leftover turkey later on today. Turkey meat and bones probably; giblets and flappy neck skin maybe.

Has anyone got any recipes or other suggestions of how the great Christmas leftover turkey mountain can be used up?

(And if you’re interested: we’ve already covered greetings/Christmas cards and wrapping paper elsewhere, if you want suggestions on how to reuse that sort of thing : ) )

    I make turkey stock with carcass, giblets, onion skins and garlic, carrot tops and tails and any other veg peel IO have lying around. Simmer for 45 mins. Is nice reduced down with red wine for a gravy too.
    As for left over meat, we have turkey stir fry, turkey and parsnip curry and best of all left over xmas lunch toasted sandwiches (in which any bit of left over lunch is tossed in trust me it works a treat) I have many more ideas, in fact we love turkey left overs so much we delibrately buy a big one to have some. Want more ideas le me know.

    I used the leftover turkey meat as a replacement for chicken in Hamburger Helper rice stirfry, this year. The bones and skin were boiled with fresh and dry herbs, carrots, celery and onions to make stock for soups, stews and such. I also use the stock as a replacement for water when making rice, or for deglazing a pan I cooked chicken in to make gravy.

    Every year, we make turkey pot pie, turkey soup and numerous sandwiches all of which end in a long nap

    Yummmm, Thanksgiving sandwiches. Turkey, stuffing, mushrooms, veggies, mashed potatoes, gravy, slapped between two slices of bread and reheated to yummy perfection. Once you get tired of it, freeze the lot til you’re in the mood for gravy and turkey once more. =P
